weigh-in & wedding weekend madness

so here's the haps, ladies & gents..

i had a post almost all ready to go for yesterday, but in the midst of all the craziness, i forgot to finish & post it! shame on me, someone slap my hand!

anyway, my weigh-in from yesterday was horrendous. i'm convinced that i sabotaged myself on friday night. randy and i were at a rehearsal dinner for a friend's wedding, and the choices of diet-friendly food were limited, so we kind of had to work with what we had (i think i forgot to mention, randy's on the diet kick too!). anyway, see below for my disappointing results:

7/24-7/30: +2.5 lbs
7/11-7/30: -3.5 lbs

i'm still down 3.5 pounds overall, but i was hoping to be closer to 10. in all honesty, i feel closer to 10 than i do 3.5, so even though i gained, i'm still feeling good. there's always next week, right?

there are also 4 other people at work that are on the slow-carb diet, and we fantasize about our cheat day all day long! i wonder who added cake and tequila...??



so yesterday, our friends matt & carmella got married. since randy was the best man, it was a full day of wedding-ness for us. i took pictures of the bride getting ready so i got there pretty early in the afternoon. here are some shots from the morning:

dear garage door opener,


i would appreciate if you could make up your mind about needing new batteries. you know i would happily replace yours should they die. but it is confusing how sometimes you open my garage so effortlessly, but then other times i have to hit you against my steering wheel to get you to work. i realize that electronics can be unreliable at best, but regardless if you decide you need new batteries or not, i promise to love you just the same.

if there are people around when i get home, i become self-conscious when i press your button and the garage does not open - i feel like they'll think i don't really live there or that they will get some sick satisfaction from my struggle. i don't know if there's a miscommunication happening between you and the actual garage door or if old age is to blame, but let me know and i will help you, i promise! to be truthful, i might make randy help you because he is far better at these kinds of matters than i am, but regardless, i won't stop until you get the attention you need.

don't be afraid to speak up! it will make things better for everyone.

thyme to cook with carey

i am sooo excited to introduce a new monthly feature to the daily do:


some of you may recognize the name - carey is a coworker of mine who has become a fast friend. we go to the gym together, joke around at work together, and see each other some weekends. unlike myself, carey knows how to whip up fun and exciting meals, so i asked if she would create a dish every month to share with my readers!

she and i got together and thought there was no better way to start than with breakfast! earlier than i would have liked on a saturday morning, i made the trek to carey's apartment and she served me a soyrizo scramble!



Soyrizo Scramble – Easy, Delicious breakfast!


Ingredients:
Package of Soyrizo (or pork/beef Chorizo if you prefer) – I chose Soyrizo cause it’s a healthier option and taste just as good!
Bell Peppers (Preferred Colors) – I chose yellow and orange because they are my favorite!
Eggs (1 - 2 eggs per person)
Cilantro
Green Onion
Yellow Onion – Small
Hash Browns
Tapatio (or your favorite hot sauce) – omit if you have a mild tongue
Garlic Sea Salt & Pepper

Slice Bell Peppers and Onions lengthwise in thin strips (also know as julienne). Heat pan to medium heat. When you can feel heat coming off of the pan, add a dash of butter. Add bell peppers to butter and season with garlic salt and pepper. Bell peppers will be done when they have softened. When those are done cooking, add a dash more butter and the yellow onions. Onions will be translucent when cooked through. Remove and set aside with bell peppers. Scramble eggs in a bowl and set aside. Cook Chorizo until easily separated and a little golden brown. When chorizo is cooked through add eggs, peppers and onions back to the pan and if you prefer, add Tapatio to taste. Scramble will be done when eggs have cooked through and it no longer looks wet.

Chop green onion and cilantro. Top scramble with a dash of sour cream and garnish with green onion/cilantro.

You can always add potatoes or hash browns to the mixture or a little cheddar cheese for added flavor.
